1. Apricot Glazed Pork Roast
Prep Time 5 min. Cook Time About 9 hours
Pork Roast slow cook to tenderness under a tangy glaze of apricot preserves, mustard and onion.
1 can (10 1/2 oz) Campbell’s Chicken Broth
1 jar (18 oz) apricot preserves
1 large onion chopped
2 tbsp. Dijon-style mustard
4 lb boneless pork loin roast
Mix broth, preserves, onion and mustard in 3 1/1 qt slow cooker. Cut pork to fit and add to cooker.
Cover and cook on low 8-9 hours or until done. Serves 8
Or you can cook on high for 4-5 hours.
For thicker sauce mix 2 tbsp cornstarch and 2 tbsp. water until smooth. Remove pork from cooker. Stir in cornstarch mixture into cooker. Cover and cook on HIGH 10 min. or until mixture boils and thickens.
2. Now and Later Baked Ziti
Prep Time 5 min. Cook time 1 hr. 40 min
Ziti, sauteed beef and onion, pasta sauce and cheeses are combined to bake and serve now or freeze to bake later.
2 lb. ground beef
1 large onion, chopped
1 jar (67 oz) Prego Pasta Sauce with Fresh Mushrooms
1 box (16 oz) box of Ziti
3 cups of shredded mozzarella cheese
1/2 cup grated Parmesan Cheese.
Cook Beef and onion in a saucepan until browned. Pour off fat.
Stir in pasta sauce, ziti and 2 cups of mozzarella cheese. Spoon into 2 (12 1/2 x 8 1/2″ disposable foil pans. Top with remaining mozzarella and Parmesan.
Bake at 350 for 30 min. or until hot. Serves 12.
To freeze, prepare ziti but do not bake. Cover with foil and freeze. Bake frozen ziti uncovered at 350 for 1 hr. or until hot. Or refrigerate 24 hr to thaw. Bake thawed ziti uncovered at 350 for 45 min. or until hot.
This is very define southern corn pudding. This one tastes very similar to the corn pudding that Bovines has in Murrells Inlet.- just below Myrtle Beach. The only difference is that this one is potentially better! It’s excellent and is incredibly easy.
1 can of cream style corn
1/2 cup of sugar
3 Tbsp flour
4 Tbsp melted butter (do not substitute margarine)
1 cup of milk
1/8 tsp. salt
Mix all ingredients together and pour into a 1 1/2 quart baking dish. Bake at 350 uncovered for 60 minutes.
4. Easy Chicken Pot Pie
2 Pastry Shells
Cream of Chicken Soup
Can of Chicken ( large can)
Combine last 3 ingredients and put in pie shells bake at 350 for 45 minutes
5. Carnation Mashed Potatoes
Prep time 15 mins Cook time 20 mins. Serves 6
6 medium potatoes, peeled and cut into 1 inch chunks
1 cup of Nestle Carnation Evaporated milk
1/4 cup butter or margarine
Place potatoes in a large saucepan. Cover with water, bring to a boil. Cook over medium-high heat for 15 – 20 mins or until tender; drain.
Return potatoes to saucepan; add evaporated milk and butter. Beat with mixer until smooth. Season with salt and pepper.
Note: Chopped green onions, chopped parsley or cooked crumbled bacon can be added.
6. Salsa Recipe
4 cans of petite diced tomatoes
1 cup chopped onion
1 cup chopped green peppers
4 tbs of red wine vinegar
1 tbs of sugar
3 tsp of Chili w/lime seasoning
dash of salt and pepper
2-3 tsp of crushed red pepper flakes
Cilantro to taste (about 2 tsp)
1 can white shoe-peg corn
juice from one or two limes depending on your preference.
Mix all ingredients together.
7. Monkey Bread
3 packages of buttermilk biscuits.
1 cup of sugar (divided)
2 tsp of cinnamon
1 cup of butter
1/2 cup brown sugar
Take 3 packages of buttermilk biscuits (10 per roll) and cut each rol into 4 pieces. Drop roll pieces into 1 cup sugar and 2 tsp of cinnamon. Drop sugar-coated pieces into a well buttered Bundt pan (do not squish roll pieces when placing them in the Bundt pan).
Put 1/2 cup of the left-over sugar-cinnamon mix and 1/2 cup packed brown sugar and 1 cup of butter in a small saucepan.
Bring this mixture just to a boil; remove from the heat immediately. Carefully drizzle over the roll pieces.
Bake at 350 for 30 min.
Cool slightly in an upright position, then tip pan over onto a plate to remove monkey pull-apart bread.
8. Oreo Balls
1 pgk. Oreo Cookies
1 8 oz cream cheese
1 pgk vanila candy coating (candiquik found @ Foodlion or almond bark @Walmart.)
With food processor finely crush package of Oreo Cookies. Soften 8 oz cream cheese. Mix crushed cookies and cream cheese. Roll into balls and place on cookie sheet lined with wax paper. Put in refrigerator to chill for 2-3 hours (if in a hurry place in freezer for 30 min.)
Melt the candy coating following the directions on the package. Dip Oreo Balls into the candy coating and place back on the cookie sheet. Place back into the refrigerator to chill.
9. Peanut Butter Balls
Mix 1/3 cup peanut butter with 3 tbsp butter ( no margarine)
Gradually add 1 cup of powdered sugar
Shape into 30 1 inch balls and place on wax paper.( let dry about 20 mins.)
Melt candy coating on low heat (8 oz)
Use tongs to dip balls into coating.
Store tightly covered in the fridge.

2 cups of flour
1/2 tsp of salt
1 tsp of baking soda
1 tsp of cinnamon
1 tsp pf ginger
1/2 tsp of ground cloves
3/4 cup shortening
1/4 cup of molasses
1 egg slightly beaten
Combine sugar, flour, salt, soda and spices. Cut in shortening. Then stir in molasses and egg. Blend thoroughly. Shape dough into one inch balls and roll in the sugar. Place on ungreased baking sheets, Bake at 350 for 10 mins. DO NOT OVER BAKE.
